Lunch Idea

Good tomato season is so short, especially here in Vermont!  And even if you don't have your own garden there are still so many (probably way better looking than my funny looking ones) heirloom tomatoes at the farmers markets.  This is the only time of year that a plain old tomato sandwich with salt and mayo on crusty bread is a really appealing option.  You could even make this for yourself at work, all you need is a knife.  Fast, easy and delicious, and so fleeting.
